Funfetti Ice Cream Tacos
There is no treat that screams "summer fun" quite like funfetti ice cream tacos. This playful dessert starts with a simple, buttery funfetti sugar cookie, baked until it’s perfectly golden and chewy. The magic happens the moment they come out of the oven. While still warm and pliable, each cookie is carefully draped over a makeshift mold—often between two cups—to cool and take on that perfect taco shape. Once they have completely set, these funfetti cookie shells become a sweet vessel for a scoop of your favorite ice cream.
The final touches are what make these ice cream tacos truly special. The exposed ice cream is dipped into a homemade chocolate magic shell, which instantly hardens into a crisp, satisfying layer. But before the chocolate sets, a final, generous sprinkle of funfetti is added for that extra pop of color and fun. The result is a delightful, handheld dessert that captures all the joy of summer. You get the chewy crunch of the cookie shell, the creamy coolness of the ice cream, and the delightful snap of the chocolate shell, all in one happy, funfetti ice cream taco bite.
Funfetti ice cream “Tacos“
Makes about 16-18
Ingredients
170 grams (170 g) unsalted butter, room temperature
150 grams (150 g) plus 1 TBSP granulated sugar
100 grams (100 g) light brown sugar, packed
1 large egg, room temperature
1 tsp vanilla extract
281 grams (280 g) all-purpose flour
3/4 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp kosher salt
90 grams rainbow sprinkles
For the Chocolate Magic Shell
1 cup (190 grams) semi-sweet chocolate chips
3 tablespoons coconut oil (measured when solid)
Method
Before beginning your cookies dough, prep your parchment squares. Cut individual squares of parchment paper, one for each cookie. This will make it easier to handle the hot cookies right out of the oven.
Make the funfetti cookie dough: In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugars on medium high speed until light and fluffy, about 2-3 minutes.
Stop the mixer and scrape down the sides of the bowl.
Add the egg and vanilla. Mix on low speed until fully incorporated.
Scrape down the sides of the bowl as needed.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt.
Add the dry ingredients to the wet ingredients and mix on low speed just until combined. Do not over mix.
Remove the bowl from the stand mixer and stir in the rainbow sprinkles by hand with a spatula or wooden spoon, being careful not to over mix the dough.
Preheat oven to 350 degrees.
Place each funfetti sugar cookie on its own parchment square on a baking sheet. Bake until they are just golden brown around the edges, about 12 minutes. Be careful not to overbake, or the cookies will become too hard and crack when you try to shape them.
On your working surface, place two cups on the table about 2 inches apart.
As soon as you pull the cookies from the oven, you must work quickly. Immediately pick up a parchment square with the hot cookie on it and carefully place the cookie between the two cups. The cups will hold the sides of the cookie up, creating the taco shell shape.
Let the cookies cool completely on the cups. This is a critical step, as the cookies will harden as they cool, holding their taco shell shape perfectly. Once cool, they are ready to be filled with your favorite ice cream.
Meanwhile, make your chocolate magic shell: Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-30 second increments, making sure to stir very well after each increment, until completely melted and smooth.
Fill each cooled cookie taco with your favorite ice cream then immediately dip the exposed ice cream in your chocolate magic shell. I did try filling all my tacos with my ice cream all at once and placed all of them in my freezer. But this ended up melting my ice cream since my freezer is a regular freezer and not one of those flash freezers that constantly blows cold air. So that’s why I fill my tacos one at a time and dip them in the chocolate as I go.
Before your chocolate shell sets, you can sprinkle on your favorite rainbow sprinkles.
