Creamy Boursin Chicken

Serves 4

Ingredients

  • 4 (about 2lbs) chicken breasts (i cut my giant two chicken breasts into 4 pieces)

  • 1 tablespoon olive oil

  • 1/2 teaspoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 3 tablespoons butter

  • 1 onion, thinly sliced

  • 4 cloves garlic minced

  • 1/3 cup white wine

  • 1/2 cup low sodium chicken broth

  • 1 (5.2-oz) package Boursin cheese

  • salt&pepper to taste

  • 2 Tablespoons fresh parsley, chopped

To Serve

  • with pasta

  • with rice

  • with mashed potatoes

  • roasted vegetables of your choice

  • peas

  • or anything goes

Instructions

  1. Pat the chicken dry with paper towels.

  2. Drizzle with olive oil and massage in the paprika, onion powder, and garlic powder.

  3. In a large pan over medium high heat, add in some olive oil. Add the seasoned chicken. Cook for 5-7 minutes on each side until fully cooked or until the internal temperature is at or above 165F.

  4. Remove the chicken from the pan.

  5. Add in the butter to the same pan and melt it over medium heat. Add in the onions and cook for 3 minutes until the onions soften. Then add in the garlic and cook for a minute until fragrant.

  6. Pour in the white wine to deglaze the pan. Then pour in the chicken broth and the Boursin cheese. Melt the cheese and bring to a simmer. Stir in the fresh parsley.

  7. Add in the cooked chicken to the pan and top with the creamy sauce.

  8. Serve with pasta, rice, or even mashed potatoes!
